Tomato Whiting

Ingredients
  • 4 whiting
  • lemon and parsley to garnish
  • 4 tomatoes
  • little lemon juice
  • seasoning
Clean the whiting and split down the centre. Season well. Fill with half the sliced tomatoes, top with the rest of the tomatoes, cover with buttered paper and bake for 20 minutes in a moderately hot oven (400°F). Serve garnished with lemon and parsley.
